Froggie’s Cinnamon-Roasted Almonds
2 egg whites
1 tsp cold water
3 c whole almonds
1/2 c white sugar
1/2 c brown sugar
1/3 tsp salt
2 Tbsp ground cinnamon
Preheat oven to 250 degrees. Line a jellyroll pan with greased parchment paper. Lightly beat egg whites: add water and beat until frothy but not stiff. Add the nuts and stir until well coated. Mix the sugar, salt, and cinnamon and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan. Bake for 1 hour in the preheated oven, tossing occasionally until golden. Allow to cool, then store nuts in airtight containers.
