Best Green Chili Casserole
1 pkg corn tortillas
1 can chopped green chili
2 small cans chicken (or 3 cooked chicken breasts shredded, I slow cook them topped with Rotel tomatoes w/green chili)
2 c grated cheddar cheese
2 cans cream of chicken soup
1 c reserved chicken broth
1 small onion, chopped (opt)
1 c sour cream
salt and pepper
Mix 2 soups, chili, broth, sour cream and onion. Tear tortillas in small pieces. Put in layers, starting w/tortillas, soup mix and grated cheese. Bake 1/2 hour at 375 degrees.

The cream soups substitution is what I’m trying to deal with.
Also, how many layers do you do, and which one do you end up with? Um, and start with.
I did indeed! I made some modifications last night, and I really liked the extra flavor from the sour cream. ( I also added about a Tbsp of taco seasoning but don’t think it made much of a taste difference so I didn’t add it to the recipe)
What are you using as a replacement for the soups? I have made homemade cream of chicken before. I remember adding some corn starch to thicken it a bit.
