1/4 c chopped cilantro
1/2 c finely diced red onion
1 Tbsp minced garlic
1 bell pepper, chopped
1 jalapeno pepper, chopped (remove seeds for a more mild flavor)
1 Tbsp olive oil
3 14.5 cans diced tomatoes
1 lb bag black beans, soaked overnight, rinsed and drained
1 Tbsp Jamaican jerk seasoning
1 box dirty rice
salt/pepper, opt
Heat oil to medium heat and add cilantro, onion, garlic, bell pepper, and jalapeno pepper. Saute until onion is slightly translucent.
Turn crockpot on to high setting. Add black beans, sauted mixture, diced tomatoes (juice and all) and jerk seasoning. Cook for 5 hours, stirring on occasion. Test black beans for doneness. Stir in dirty rice box ingredients and let cook for another 25 minutes until rice is done.
