1 (18 oz) package refrigerated sugar cookie dough
1 (8 oz) package cream cheese, softened
1 (8 oz) container frozen whipped topping, thawed
½ c powdered sugar
1 Tbsp lemon juice
¼ c toasted coconut (opt)
Assorted fruits that you like: strawberries, kiwi, passion fruit, pineapple, grapes, raspberries, blackberries, mandarin oranges, peaches, etc. If you use bananas make sure you dip them in lemon or pineapple juice so they don’t discolor and put them on last.
Spray Pam on bottom of pizza pan. Spread sugar cookie dough out evenly and bake as directed. (most of the directions state 350 degrees for 10-12 minutes. Make sure the dough is brown, if you undercook it the topping will make it soggy and you don’t want that to happen.) Remove from oven and let cool.
While the sugar cookie dough is baking, mix together the cream cheese, frozen topping, powdered sugar and lemon juice.
Spread cream cheese mixture evenly over cooled cookie. Let chill for a couple of hours. Arrange fruit on top in whatever fashion you prefer and top with coconut if desired just prior to slicing into wedges and serving.
