One whole pineapple, finely diced
Jicama, diced…use about 2/3 of the amount of pineapple
1/2 red onion, finely diced
1 clove garlic, minced
1 jalapeno pepper, finely chopped (use gloves)
2 – 3 Tablespoons finely diced cilantro.
2 Tbsp lime juice
2 Tbsp balsamic vinegar
