3 15 oz cans black beans, rinsed and drained
2 celery stalks, chopped
1/2 green pepper, chopped or sliced
1/2 red onion, chopped
4 pieces peppered bacon, fried and cut into small pieces
1 large sweet potato, peeled and cut into small pieces
20 oz Sweet Baby Ray’s Barbecue Sauce
Fry bacon. Remove from grease and saute onion and green pepper in bacon grease for about 2 minutes. Remove from grease and drain.
Place black beans, celery, green pepper, onion, bacon and sweet potato chunks in crockpot. Stir BBQ sauce into it. Place on high setting and let cook for 4 hours, until the sweet potato is done.
Serve in its sauce over rice. Can accompany with chicken and cornbread.
