3 lb beef roast (chuck or round)
2 c salsa casera (reg or hot, I use hot)
2 green peppers, deseeded and sliced
2 jalapenos, deseeded and sliced
1/2 red onion, chopped
6 eggs, whisked
1 c cheddar or jack cheese
20 burrito-sized tortillas
Heavily pepper roast and sear on all sides in heated pan. Place in cockpot on low setting and pour salsa casera on top. Let cook overnight. Reduce setting to warm. Remove meat and shred. It should fall right apart. Put shredded meat back into the crockpot so it will absorb the juices it was cooked in.
Next, heat cooking pan and lightly spray with Pam. Add green peppers, onions and jalapenos and saute lightly for about two minutes on high heat. Add 3 cups of roast beef and saute an additional 3 minutes. Add eggs and and stir until the eggs are cooked through. Remove from heat and add cheese, stirring until melted.
Heat tortilla (either via griddle or microwave), place 1/2 c of meat mixture inside, roll and eat!
Guacamole, sour cream, pico de gallo all work as excellent sides.
