3 pounds chicken breasts, thawed and patted dry
5 slices of bacon, quartered
2 Tbsp McCormicks Grill Mates BBQ Seasoning
1 tsp red pepper flakes
Salt and Pepper to taste
1 bottle bbq sauce of your choice
In a large frying pan, fry up the bacon pieces until semi crisp and there is about 1/4 c bacon grease in the pan. Remove bacon and keep heat on high. Sprinkle BBQ seasoning, red pepper flakes, salt and pepper on the chicken breasts and brown in the bacon grease.
Lay bacon bits in the bottom of the crockpot. Place browned chicken on top of the bacon. Drizzle BBQ sauce on top and let bake for 4-6 hours on high heat. Turn off heat and let chicken set for about 20 minutes. Using two forks, shred the chicken and the bacon.
Serve in between your favorite bread. You can add a mozzarrella or mild cheddar, tomato, lettuce, onion if desired.
Pepperoni Pasta Salad
1 18 oz bag pasta rotini
1/4 c chopped green onion
1 yellow pepper, chopped
1/2 green pepper, chopped
1 c celery, sliced
1 cucumber, sliced and quartered
30 cherry tomatoes, quartered
20 sliced pepperoni, quartered
1/2 c mozzarrella chunks
1 16 oz bottle Italian Dressing
Prepare pasta as directed. Drain with cool water and place in a bowl. Add the rest of the ingredients and toss. Let chill for at least an hour to allow dressing to blend.
