This is the simplest recipe I’ve posted in a very long time. So easy. And so tasty! If you are not familiar with roasted cauliflower, the roasting process brings out a bit of a nutty flavor as well as naturally caramelizing. Which makes for a delightfully beautiful dish!
1 medium head cauliflower, cut or pulled into big bite sized florets
1 Tablespoon extra virgin olive oil
2 pieces bacon, chopped into 1/4 inch pieces
1/2 fresh jalapeno, sliced
1 Tbsp chopped garlic
1 Tablespoon Penzey’s Seasoned Pepper
Preheat oven to 400. Mix everything but the pepper in a bag so the olive oil will distribute. Sprinkle pepper on top. Dump into a baking pan so that it is a single layer. Cover with tin foil. Let cook for 45 minutes, flipping halfway with a metal spatula.
Remove from pan, and eat immediately.
