Froggie’s Easy Apple Fritters
2 cups apples – peeled, cored and chopped
2 Tablespoons cinnamon
1 teaspoon nutmeg
2 Tablespoon brown sugar
1 Tablespoon white sugar
1 quart vegetable oil for deep-frying
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
2 eggs, beaten
1 tablespoon vegetable oil
Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
Peel, chop apples and toss with cinnamon, sugar, brown sugar and nutmeg. Set aside in a small bowl.
In a large bowl, stir together the flour, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels.
Toss with cinnamon sugar, or drizzle a powdered sugar glaze while still warm.
(glaze: 1 cup Powdered sugar, any type of creamer…1-2 Tablespoons…to desired consistency)
These fritters have the spongy, chewy consistency of a French cruller and are very easy and delicious.
Cooking tips: I sprinkled a bit of lemon juice on the apple pieces to keep them from browning while I prepared the rest of the recipe. Also, don’t make the oil too hot or it will brown the fritter before cooking it fully in the inside. Related to that, don’t make the fritters too thick.
