1/2 c butter, softened
1/2 c brown sugar
1/2 c white sugar
2 eggs
1 1/2 c mashed [very ripe, I use ones that are nearly all brown on the outside] bananas
1 Tbsp cinnamon
1 tsp nutmeg
2 c flour
1 tsp baking soda
Preheat oven to 350 and grease 2 large bread pans. Cream together butter and sugars. Add eggs and mix in. Add bananas, cinnamon and nutmeg.
Stir in flour and soda. Pour into equal amounts in pans.
Mix together streusel:
1/4 c sugar
1 Tbsp cinnamon
1/4 crushed pecans (opt)
2 Tbsp flour
2 Tbsp quick oats
1 Tbsp butter
Using a fork, incorporate butter with other ingredients. Sprinkle on top of prepared bread dough. Place in oven and let cook for an hour. Remove and let cool.
Serve plain or with butter.
This is a super easy recipe to make. I always mix it together with a wooden spoon, no mixer is needed.

I just made this & it turned out beautifully! Best way to use bananas I’d otherwise toss. Can’t wait to take a loaf to my little brother & his wife who just brought home their first baby.
