It’s that time of year! And these are a delicious way to enjoy it.

3 Tablespoons butter (browned)
5 1/2 cups mini marshmallows
1 Tablespoon brown sugar
2 teaspoons pumpkin pie spice
1 cup butterscotch chips

Butter a 9×13 pan (or 10×10 if you’d like thicker treats). In large saucepan on medium high heat stir butter until melted. Continue stirring until butter turns brown. Don’t overcook or scorch. Lower temp to low-medium and add marshmallows, stirring constantly until melted. Remove from heat.

Add the brown sugar and pumpkin pie spice and stir together. Add the butterscotch cups and stir until mixed and is beginning to melt.

Pour into pan. Let cool, Cut into squares and serve!

Perfect for parties.

St Patricks Day Rice Crispies

Happy Green day!

This is a very simple variation of the traditional rice crispy treat.

3 Tbsp butter or margarine
1 package (15 oz) miniature marshmallows (the equivalent of 4 cups)
1/4 c brown sugar
green food color
1/2 c miniature green M&Ms
6 c rice crispies cereal

Butter 13×9 pan.  In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

Mix in brown sugar and green food color to desired color (I used 1 tsp for the color in the picture).  Add rice crispies cereal. Stir until well coated.  Add M&Ms as last step, barely stirring to incorporate so they don’t completely melt.  They will create a chocolate marble in places.

Dump mixture into pan.  Using either a spatula or buttered hands, press evenly into pan.  Cool and cut into squares.  Can use cookie cutters if desired.

MICROWAVE DIRECTIONS:
In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow above steps. Microwave cooking times may vary.
