4 lbs whole fresh ripe strawberries
1 8 oz block neufchatel cheese, softened
1/4 c powdered sugar
1 Tbsp vanilla
1 c softened cool whip
Blend cheese, powdered sugar and vanilla. Fold in cool whip and refrigerate for at least 1/2 hour. Meanwhile, cut the green top off each strawberry and set it upside down on wax paper. Take a knife and crisscross, not going all the way through to the bottom of the strawberry.
Spoon your filling into a piping or cake decorating bag. If you do not have one, a strong baggie will suffice, just cut off the tip of one corner. Slightly open up the crisscross cuts and pipe in the filling.
You can serve as is, or drizzle chocolate or sprinkle powdered sugar on the top.
It tastes just like strawberry cheesecake.
